A vegan dark chocolate “cheese” cake at Millennium Restaurant, San Francisco. It was delicious! thick and decadent with a sweet caramel “ice cream” on top and a tart raspberry sauce.

Healthy, Vegan & Yummy Mint Banana Chocolate Chip Ice Cream!
It is extremely hot and humid here in New Hampshire today. And it’s days like these that I crave an ice cold treat. I don’t consider myself a vegan, however recently (for the most part) I have eliminated most dairy and meat products from my diet. My body has never really digested dairy well, but it’s one of those things that If I think I need it- I’ll slowly put it back in. With that being said, it’s been hard not to buy a carton of ice cream during these hot summer months, so I’ve been trying out new recipes for me and my vegan friends to indulge with. I came up with this, and it’s so good. The combination of mint and banana may sound weird but I promise it’s delicious. All you need is a blender- I use the magic bullet, and a food processor works even better! For the chocolate chips all you need is a frying pan!
Here it goes:
For the Mint Banana Ice Cream:
Ingredients:
1 and 1/2 Frozen Medium Sized Banana (cut into chunks)
1 small mint leaf 1 cup of raw spinach (optional- but makes this treat even more nutritious!)
1 teaspoon stevia
1 cup of unsweetened almond milk or non-dairy milk of choice.
Blend all ingredients into a food processor or blender until creamy and smooth. You may need to add more almond milk or water and ice.
For the Chocolate Chips:
Ingredients:
1 tablespoon of unrefined coconut oil
1 tablespoon of carob powder (not a vegan? use regular cocoa powder!)
place ingredients into a frying pan, stir, and heat until coconut oil is completely melted (don’t let it boil) Place the chocolate mixture into the frozen ice cream and you will see that the chocolate will harden! You can break it into small chunks with a spoon so that they are like little chocolate chips!
Don’t like bananas? Black Raspberries are really good too! Or try it with your favorite fruit!
FYI: plain old cocoa powder (i.e., with nothing extra added) is naturally vegan!
