For dinner tonight, I made gluten free brown rice pasta shells stuffed with cashew “Ricotta” with homemade tomato sauce. For dessert we had spelt flour apple pie (spelt contains very small amounts of gluten), vanilla ice cream and caramel sauce on top. So good! This was the first pie I’ve ever made and if I’m not mistaken, my first ever pie as a vegan. The pictures kinda suck more than usual I know… BUT in all fairness I wanted to eat. ;)
